Smoked Salmon and Veggie Frittata

Most of the time I’m not to keen on fussing over breakfast for the week. For me it’s the meal I have to eat before I get to the best part of the day, lunch o’clock. So it’s a struggle for me to make something that will be appetizing and relatively healthy. Well I’ve since learned how to make a frittata, ever since I got my cast iron and they’ve been the perfect solution to my problem.

I’ve since learned why a frittata is so great, here are my top 10 reasons why:

  1. A frittata is quick and easy to make.
  2. There is an endless combination of ingredients to use.
  3. It’s perfect to serve large groups.
  4. It can be a weeks work of breakfast.
  5. It’s easy to serve.
  6. It’s is easy to pack for work.
  7. Frittatas are yummy.
  8. You can trick your kids into eating vegetables.
  9. You can trick yourself into eating more vegetables.
  10. They’re great to Instagram.

I mean look how pretty all these ingredients are. I love blasting some music on a Sunday afternoon and chop, chop, chopping away. It’s best to walk around your local farmer’s market to see what’s in season and use that for your frittata. To serve it’s best paired with a yummy sauce like a mint, lemon, and yogurt sauce or garlic aioli.

When packing for lunch just simply divide into however many parts you need. For most of us that’s five slices, but I usually just cut it into six so the pieces are more even and I will have one extra for the weekend. If you want to be the envy of your office I really suggest giving this a try. Everyone will think you’re the most domesticated goddess, or god, there is. But don’t let them in on your secret how easy it is, just send them this recipe instead. 😉

Smoked Salmon and Veggie Frittata

INGREDIENTS

  • A dozen eggs
  • 1 potato
  • 2 heads of broccoli
  • 5 mini peppers
  • 1/2 pound of mushrooms
  • 2 ears of corn or 1 cup frozen
  • 1 red onion
  • Smoked Salmon
  • Add any veggies that you fancy and don't add the salmon if you don't want to!

PROCESS

  1. Preheat your oven to 350.
  2. Whisk all of your eggs and set aside.
  3. Dice dice dice! Gather all the veggies you want to use and chop them up into bite sized pieces.
  4. If you choose to use potato, then peel and chop it into cubes and boil them til they are soft.
  5. Depending on what vegetables you've chosen, is the order you will cook them. Generally, vegetables that take longer to cook will go in first. So this is the basic order: Mushrooms, Red Onion, Broccoli, Corn, Peppers, Potato.
  6. Once all the vegetables are cooked pour in your whisked eggs.
  7. Places pieces of salmon on top.
  8. Place your cast-iron skillet into the oven and let the frittata bake for about 25 minutes.
  9. Remove from the oven and eat with a garlic aioli.
